Carnitas are my favorite type of meat to eat in a taco. This was my first attempt making it and it was so easy! Not to mention delicious. It does require advance planning as the meat sits in the crock pot over night. I made it for a friend the other night to get a second opinion and he said "That was really good, you should be a chef" to which I replied "I am!" he retorted " Well you should post your recipes" and I said "I do!" so needless to say it was a success 🙂

Is there no liquid in the crock pot when cooking the pork shoulder overnight?

No added liquid. The fat from the pork will become the liquid.

You mention tomatillos…there is none listed in the recipe. Please clarify. Also ,what toppers do you suggest?
    Thanks you.

Im confused… you say I mention tomatillos in the recipe but have just checked the recipe several times and I don’t see what you are talking about. As for toppers you can put cheese, cilantro, shredded cabbage, bell peppers, tomatoes or whatever else you like to put on tacos.

I believe the tomatillos are in reference to a comment you posted on 12/20/15, mentioning that the liquid in the crock pot comes from the fat from the pork and the tomatillos.

Ahhh got it. Originally I had put tomatillos in the recipe but the second time I made it I did it with out and it was much simpler and just as tasty so I modified the recipe.

So no liquid in the crock pot with the pork?

No liquid, the fat from the pork shoulder will become the liquid.

spices -when the recipes calls for chopped spices (chopped oregano) does this mean fresh herbs instead of dried spices? thank you!

The oregano and marjoram are the only herbs I had used fresh but you could probably substitute them for dry if you wanted to but fresh always takes better in my opinion. I will update the recipe to make it more clear 🙂

This was the first recipe that I tried since being diagnosed with SIBO. My whole family loved it.

    Thank you for doing this.

This may be a silly question however – when cooking the shoulder over night on low in the crockpot .. is the meat in liquid? I’ve never used my crockpot to cook anything dry.

The fat turns to liquid as it heats up 🙂

I made your peanut soup and lemon raspberry muffins. My friend just made the carnitas tonight. ALL were delicious! I feel like this this is a godsend as it’s been so difficult to figure out what to eat on the SIBO specific diet. I cannot thank you enough!
