Creamy Cauliflower

These are a delicious mashed potatoes replacement. Who knew cauliflower could be so good!

Serves: 4
Ingredients
  • 1 Lg Cauliflower head
  • 3 tbsp 24 hour yogurt or coconut oil
  • ½ tbsp horseradish mustard
  • 1 tsp rosemary chopped
  • 1 tsp salt
  • ¼ tsp black pepper
Instructions
  1. Put cauliflower in a pot with 2 inches of water and boil until soft enough to stick a fork in it without any resistance
  2. Put all ingredients in a Cuisinart and blend until soft
  3. Best served warm

    This looks amazing! One question, I thought cauliflower was a high fodmap and therefore a bad idea for SIBO? Same with green beans in another recipe. I’d love to try but am hesitant. Also, I thought honey was not ok with fodmaps. I have been using the great chart you have a link to and following the Sibo diet for two weeks and it’s been a huge help. Thanks for this great site I love trying your recipes.
