Lemon and Raspberry Muffins - Tart and sweet they are truly a treat to eat. :)

Ingredients
  • 1 ½ cup almond flour
  • ⅓ cup coconut flour
  • ¼ tsp salt
  • 1 tsp baking soda
  • 3 eggs
  • 3 tbsp lemon juice
  • 3 tsp lemon rind (this is equivalent to the rind of one whole lemon)
  • 1 tsp vanilla extract
  • ¼ cup honey
  • ¼ cup coconut milk
  • 1 tbsp coconut oil
  • 6oz raspberries (1 container)
Instructions
  1. Preheat oven to 350 degrees
  2. Put all ingredients except for raspberries into a large bowl and mix with hand mixer until smooth
  3. Add in raspberries and mix for about 10 seconds or until raspberries have broken up and mixed in
  4. Line a muffin pan with paper muffin cups
  5. Put about ¼ cup in each muffin cup
  6. Bake for 25-30 min or until muffin tops are a golden brown
