Lemon Raspberry Muffins

- 1 ½ cup almond flour
- ⅓ cup coconut flour
- ¼ tsp salt
- 1 tsp baking soda
- 3 eggs
- 3 tbsp lemon juice
- 3 tsp lemon rind (this is equivalent to the rind of one whole lemon)
- 1 tsp vanilla extract
- ¼ cup honey
- ¼ cup coconut milk
- 1 tbsp coconut oil
- 6oz raspberries (1 container)
- Preheat oven to 350 degrees
- Put all ingredients except for raspberries into a large bowl and mix with hand mixer until smooth
- Add in raspberries and mix for about 10 seconds or until raspberries have broken up and mixed in
- Line a muffin pan with paper muffin cups
- Put about ¼ cup in each muffin cup
- Bake for 25-30 min or until muffin tops are a golden brown
