Jalapeño, Spinach & Cheddar Biscuits

Don't be deceived by the green these biscuits are amazing! Spicy, savory with a hint of sweet. These are like nothing you have ever had before, and leave you wanting more!
Serves: 6
  • Dry ingredients:
  • 2 cups Almond Flour
  • 1 tsp baking powder
  • ¾ tsp salt
  • Wet ingredients:
  • 2 eggs
  • 2 tbsp honey
  • 1 jalapeno- minced
  • 1 bunch spinach
  • 2 tbsp basil leaves- minced
  • ⅔ cup cheddar cheese cubes
  • 4 tbsp shortening
  1. Preheat oven to 400 degrees
  2. Add all dry ingredients (flours, salt, baking soda) into a mixing bowel
  3. Cut stalks off of spinach and put spinach leaves, eggs, honey, minced jalapeno, and minced basil into blender and blend until smooth
  4. Melt palm shortening and add to dry ingredients
  5. Add the blender ingredients to the dry ingredients in the bowl and mix together using a hand mixer
  6. Hand stir in cheddar cubes
  7. Form dough into 6 spheres put them onto a baking sheet lined with parchment paper, flattening them into disks no more than 1” high
  8. Bake for 30 minutes or until golden brown
