Blueberries are one of my favorite fruits. The color that comes out of them when you cook them down is incredible. They are rich in bioflavonoids and are wonderful at satisfying your sweet tooth but helping to balance your blood sugar at the same time.

Serves: 8 squares
Ingredients
Crumble:
2 cups walnuts
6 dates
¼ tsp salt
1 tbsp cinnamon
⅓ cup almond flour
2 tbsp ghee or coconut oil
1 tsp baking soda
Filling:
½ cup raisins
1 cup coconut flakes
2 containers blueberries
1 container coconut milk (about 1 cup)
⅛ cup honey (I also made it without honey and it was really yummy as well)
Instructions
Preheat oven to 350 degrees
Put all filling ingredients (except for honey) into a pot and heat on medium heat stirring occasionally for about 20min
Put all crumble ingredients into a Cuisinart and blend until walnuts are crumbled but not to much that they become a paste
Put half of crumble ingredients into the bottom of a 8x8 pyrex cooking dish
When filling ingredients are nice and thickened turn off heat and stir in honey
Pour filling on top of walnut crumble and then add the rest of the crumble on top of filling
Bake in oven for 35-40 min
