Carnitas are my favorite type of meat to eat in a taco. This was my first attempt making it and it was so easy! Not to mention delicious. It does require advance planning as the meat sits in the crock pot over night. I made it for a friend the other night to get a second opinion and he said "That was really good, you should be a chef" to which I replied "I am!" he retorted " Well you should post your recipes" and I said "I do!" so needless to say it was a success :)

Ingredients
Crock Pot:
1 ½ lbs pork shoulder
1 tsp salt
Skillet Seasoning blend:
1-2 chopped jalapeños (depending on how spicy you like it)
1 tsp chopped fresh oregano
1 tsp coriander
¾ tsp paprika
½ tsp black pepper
½ tsp cumin
1 lime or lemon
5 tbsp garlic infused oil
1 ¼ tsp salt
¼ tsp chopped fresh marjoram
Instructions
Put pork shoulder in crock pot pressing salt into both sides
Cook on low overnight
Remove pork from crock pot and put in fridge for a few hour or until fat hardens
Remove meat from fat and pull the meat apart into shredded pieces
Heat skillet on medium high heat
Add garlic infused oil, then add shredded meat
Add all spices and salt
Sauté until meat starts to brown
Add lemon or lime
Serve in a lettuce shell with any toppings of your choice
