Peanut Butter and Strawberry Cookies

Peanut butter and strawberries are a match made in heaven 🙂

Ingredients
- 2 cups almond flour
- 1 cup peanut butter
- 3 tbsp palm shortening or ghee
- 1 egg
- ½ tsp baking soda
- ½ tsp cinnamon
- 1 tsp vanilla extract
- ¼ tsp salt
- ¼ cup honey + 1 tbsp
- 1lb ripe strawberries (do not use unripe strawberries as they will be too tart)
Instructions
- Preheat oven to 350 degrees
- Put all ingredients with exception of strawberries into large bowl and mix using a hand mixer
- When thoroughly blended add ½ of the chopped strawberries and using the hand mixer to blend them so some of the strawberries so the flavor infuses into the dough but you don’t want all of them to be mashed so then add in the rest of the chopped strawberries and mix them in with a spoon.
- (It is important you don't use strawberries that are not sufficiently rip as they will cause the cookies to be too tart.)
- Bake for 30-35min or until golden brown and firm

Why don’t you try raspberries, blackberries or blueberries. 1/2 pint should suffice.

I made these as written and loved them! Only took 25 minutes per pan for my oven. I stored them in the fridge and they went soft but that didn’t bother me.
