Pumpkin, Orange, Anise Muffins with Pecans

These are really dense and flavorful. A bit on the greasy side which makes them sort of feel like a french pastry more than a muffin. Anise is an excellent digestive herb. It helps to dispel gas which will help to decrease bloating. I have added only a tsp to the recipe which is not really strong enough to have much impact in terms of its medicinal effect but if you like the flavor of it feel free to add more to receive the true benefits of this amazing herb.

Ingredients
- ½ cup pumpkin puree
- ½ cup orange juice
- 1 tbsp orange rind
- 2 cup almond flour
- 2 tbsp coconut flour
- 1 tsp anise- ground (Anise is available in the bulk section of most supermarkets. It will most likely come in its whole form, so you will have to grind it in a coffee grinder or blender before using)
- ½ tsp salt
- 1 tsp vanilla extract
- ¼ tsp orange extract
- 1 tsp baking soda
- ⅓ cup honey
- 2 eggs
- ¼ tsp nutmeg
- 2 tsp cinnamon
- ¼ tsp cardamom
- ¼ tsp dried ginger
- ¼ cup palm shortening
- 2 tbsp coconut oil
- ½ cup pecan pieces
Instructions
- Preheat oven to 350 degrees
- Put all ingredients, except for pecan pieces, in a large bowl and mix with a hand mixer until smooth
- Stir in pecan pieces by hand
- Pour batter up to top of muffin tins lined with paper cups
- Bake for 25-30 minutes or until toothpick comes out clean and tops are a golden brown

Hello and thank you for this website! I am writing because I am continuing to have a problem with all of the baked goods recipes. Im on #3. Ive tried Acorn Squash Bread, Figgy Bread, and now the Pumpkin Muffins, all to varying degrees of disaster and I dont know why. Im following the instructions, measuring the ingredients correctly.. the breads do not cook all the way through and then end up burning on the sides and bottom before it has a chance to “set”. They havent taken on a bread-like shape or consistency like in the photos and dont hold together. I end up having to bake them longer than what the recipe calls for and they still havent “set”. The muffins were the best yet (didnt burn and sort of “set”), but when I removed it from the paper cup it crumbled into a million pieces and didnt hold together. I ate the cup of crumbs with a spoon, lol. What am I doing wrong? Thanks!!

Oh my gosh that sounds frustrating! I have some thoughts…
1. Did you leave out the eggs?
-Eggs will help hold everything together and cause the breads to rise.
2. Did you use only coconut flour instead of the other flours listed on the recipe?
-Coconut flour makes a really crumbly bread and if I use it it is typically in small amounts and actually now I don’t really bake with it at all anymore
3. Did you line the bottom of your baking dish with parchment paper? or paper liners for muffins?
– this is key to not having a sticky mess and having the bread burn to the bottom.
4. Maybe you need to check your oven to see if it is heating to the correct temp.
If its none of these things and you followed the recipe exactly than I am at a loss…

Hello, in your reply above you mentioned that you don’t really bake with coconut flour at all anymore. Would you replace the coconut flour in this recipe, and others that call for it, with another kind of flour ? Or would you continue to use the coconut flour where it is called for? Thanks so much for this wonderful website and the recipes!

I would do the recipe just as it is. I never bake with only coconut flour but in smaller amounts it is ok. It is good to be able to have a flour that can be used to reduce the nut content 🙂

Thanks for the reply! I just made one of your other recipes with coconut flour and it was delicious but the coconut flour doesn’t seem to be agreeing with me. Do you have a suggestion for an alternative to the coconut flour?

You can just substitute with whichever nut flour agrees with you best

Thank you! I think maybe it was the parchment. I followed the recipes, not omitting anything (eggs, etc) and did not use coco flour unless it called for it. I did grease my cooking pans, but did not used parchment. I made muffins in paper cups and they turned out perfectly… so, makes me think its parchment. Thanks for the info and reply!
