Cheesy Cauliflower Pizza Crust

NOTE: Cauliflower is more highly fermentable so can cause aggravation of SIBO symptoms in those who are extremely sensitive

Ingredients
- 1 cauliflower head
- ¼ cup coconut flour
- 1 tsp salt
- ¾ cup parmesan cheese- shredded
- 2 egg whites
- ¼ tsp Italian seasoning
- ¼ tsp black pepper
- 1 tbsp oil
Instructions
- Preheat oven to 400 degrees
- Put cauliflower head in a pot with 2 inches of water, cover and boil until soft
- Put cauliflower into food processor and pulse until cauliflower looks like rice
- Scoop cauliflower rice into a mesh bag or cloth and squeeze out excess water
- Mix all ingredients together in a bowl
- Place a sheet of parchment paper on a cookie sheet and spread cauliflower dough out so that it is about ¼ inch thck all around.
- Place in oven and bake for 30-35 min

Can you recommend an acceptable egg-white substitute? I notice that flaxseed is “yellow” in quantities of <1T. None of the other starches are on the approved list although tapioca and taro are on the Monash U low-FODMAP list.

I know its frustrating for a lot of people who can’t do eggs. Unfortunately I have not found a good egg alternative.

Duck eggs seem to be very different than chicken eggs. My daughter who cannot handle chicken eggs does well with duck eggs. I get them at an Asian market.
